Heather Sandford and Brad Marshall are the founder/farmers/butchers behind The Piggery. The Piggery started it as a pastured hog farm with an on-farm butcher shop, but quickly grew it to become a regional brand, known for its products like sliced deli meats and charcuterie. Along the way, we remade the business multiple times, adding a local food grocery & butcher shop, a farm to table restaurant, NYC Meat CSA Progra, Buying Clubs a USDA meat processing facility and a regionally distributed line of CPG (Consumer Packaged Goods – deli ham, bacon, etc) products.


We’ve had to shift our food production and distribution strategy a number of times over the past decade to respond to economic and marketplace fluctuations.
